Lasagna Soup
Ingredients

1 lb Ground Italian sausage

2 cups onions, chopped

1 cup diced carrot

2 cups button mushrooms, sliced

1 Tbs minced garlic

4 cups chicken broth

1 14.5 oz can Italian-style stewed tomatoes, chopped

1 cup Mafalda pasta (or substitute a comparable pasta)

2 cups fresh spinach, chopped

1 cup Mozzarella cheese, cubed

1⁄4 cup Parmesan cheese, shredded

4 tsps fresh basil, chiffonade (optional)
Directions

In a large pot, cook sausage over medium heat until brown. Add onion and carrot. Sauté for three minutes. Stir in mushrooms and garlic and sauté for another three minutes.

Add broth and tomatoes; bring to a boil. Simmer for 10 minutes. Add spinach and cook for another 10 minutes, or until wilted.

While preparing the soup, cook the noodles and drain.

To serve, place cubes of cheese in each serving bowl. Then ladle soup over top to melt. Place noodles into full soup bowls. Garnish with Paremesan and basil.
