Basic, traditional, a heart-warming tomato soup.

Ingredients (14 qts)
  • 36 pounds tomatoes
  • 18 onions
  • 12 stalks celery
  • 2 heads garlic
  • 4 cups basil
  • Brown sugar
  • Salt

Instructions

  1. Cut tomatoes and add to pot, bring to boil, mashing
  2. While the tomatoes are cooking, run onions, celery, garlic and basil through food processor
  3. Add to boiling tomatoes and cook for 15 minutes
  4. Run through food mill, return to pot, return to boil
  5. Taste and adjust salt/sugar to preferences
  6. Fill jar 1" headspace, 1 Tbsp lemon juice per quart
  7. Pressure can 11 lbs for 20 minutes
