Seriously - Stuffed Peppers turned into soup. Wonderful!

Ingredients (14 qts)
  • 2 quarts chicken stock
  • 12 onions, chopped
  • 20 bell peppers, seeded and chopped
  • 16 lbs tomatoes, peeled and cut
  • 4 lbs ground meat, cooked and drained
  • 1 head garlic peeled and chopped
  • ½ cup sugar
  • 1 cup cider vinegar
  • Salt and pepper

Instructions

  1. Brown meat, drain.
  2. Add everything to a pot, bring to boil
  3. Add spices.
  4. Fill jars 1" headspace.
  5. Pressure can at 10lbs for 90 minutes.
