This is not a sweet relish! Very strong flavors.

Ingredients (14 half-pints)
  • 8 cups rhubarb, chopped
  • 6 cups onion, chopped
  • 6 cups cane sugar (or beet [white] sugar)
  • cup molasses
  • 4 cups apple cider vinegar
  • 2 tsp salt (not iodized)
  • 2 tsp. cinnamon
  • 1 Tbps finely grated fresh ginger or 1 tsp ground ginger
  • 1 tsp ground cloves
  • 1 tsp ground pepper
Instructions
  1. Cook the onions until caramelized
  2. Combine all ingredients in large heavy bottomed pot.
  3. Place over medium-high heat and stir together.
  4. Bring mixture to a boil, stirring to prevent scorching.
  5. Reduce to simmer and continue to cook down and stir until quite thick - apple butterish - about an hour and a half.
  6. Fill jars to ½" headspace.
  7. Water bath for 10 minutes
