A successful recreation of Grandma Myrt's relish from my youth!

Ingredients (14 pints)
  • 24 cups corn kernels (about 60 ears)
  • 6 cups water
  • 18 stalks celery diced
  • 6 red bell peppers diced
  • 6 green bell peppers diced
  • 3 large onions diced
  • 9 cups white vinegar
  • 5 cups sugar
  • 12 teaspoons dry mustard
  • 6 teaspoons kosher salt
  • 6 teaspoons celery seed
  • 3 teaspoons ground turmeric
Instructions
  1. Combine everything, bring to a boil, stirring.
  2. Simmer 5 minutes after sugar has dissolved.
  3. Ladle into pint jars leaving ½" headspace.
  4. Water bath 15 minutes.
