Not too sweet, deep flavor, and freshness galore.

Ingredients (14 pints)
  • 10 pounds tomatoes
  • 4 stalks of celery
  • 4 large onions
  • 3 peppers (green and/or red)
  • 1 cup sugar ⅔ brown ⅓ white
  • 1 Tablespoon Allspice
  • 1 Tablespoon Cinnamon
  • 1 Tablespoon Ground Cloves
  • Red Pepper flakes to taste ( We use a ½ teaspoon)
  • ¼ cup sea salt
  • 1 cup distilled white vinegar
Instructions
  1. Chop all vegetables (or use food processor, should be chunky)
  2. Add everything to pot, bring to boil.
  3. Simmer for an hour or two, check spices.
  4. Fill jars and water bath 30 minutes.
