This is a standard, nothing exciting or exotic, just warm, filling and delicious.

Ingredients (14 qts)
  • 10 pounds stew meat, cut into 1" chunks
  • Vegetable oil
  • 24 potatoes, cubed
  • 30 carrots, sliced thick
  • 10 stalks celery, chopped
  • 8 small onions, chopped
  • 8 cloves garlic, minced
  • 2 quarts tomatoes, pureed
  • 3 gallons beef broth
  • 3 Tbsp salt
  • 1 tsp pepper
  • 2 tsp thyme
  • 5 tsp paprika

Instructions

  1. Begin heating broth.
  2. Brown the meat thoroughly in oil.
  3. Add vegetables, meat, and tomatoes to the hot broth. Bring to a boil.
  4. Add spices and adjust seasonings.
  5. Fill jars 1" headspace. Pressure cook at 11 lbs for 1½ hours (90 minutes).
